a keeper

Apple cheddar chicken. As I awoke this morning, memories of last night's deliciousness came flooding back, leaving me wanting more. But there was no more. Alas. Instead, I had my usual bowl of granola. Love.yummy.granola.

As for the apple cheddar chicken (thanks to last week's Longo's flyer), here is what I loved about it.
1. It was deeeeeelish.
2. My husband thought it was deeeeeelish.
3. It was a simple recipe that tasted like complexity and effort and love.
4. All of the required ingredients can generally be found in my kitchen (minus the chicken - don't laugh).
5. There was extra apple yumminess which we ate on our quinoa.

Here are the substitutions I made - I used marble cheddar instead of Gouda. I am married to a plain cheese kind of guy. He eats mozzarella, cheddar, and Parmesan, and variations on these things (smoked, maple, etc.). Therefore, we have these 3 cheeses in our house (and feta and Brie for me). Secondly, I used Honeycrisp apples, not Courtlands - for the simple reason of convenience. I had Honeycrisps in my fridge.

You should make this tomorrow night for supper. Really. It would be the best way to start your week. If you don't, you can't blame me if your week stinks. ;)

My sis-in-law made this tonight and reminded me of two other modifications. One, I didn't use apple cider. I'm not sure why it is listed as an ingredient. And two, I baked mine for 30 mi tues, not 15. Thanks, Jen!

Looks yummy... I'll definitely try it, except all the Longo's products will be PC. Just the way it is around here ;)
