the trouble with dinner

Don't get me wrong. We, the Smith clan, love dinner. Sometimes we love it too much (if such a thing could exist). Ro and I have started to eat dinner as our noon meal, not to be confused with lunch which we eat as our supper meal. Confused yet? Join the thoughts in my head.

The trouble with dinner is this - I always struggle to come up with dinner ideas. I own cookbooks, read some pretty tasty cooking blogs, but when push comes to shove, I can never decide what to prepare. There was a day before motherhood when eating cereal would suffice. Now that I am the nutrient provider for 2 daughters (one in utero), I feel the need to make good choices even more. I cook most things (I really enjoy cooking), don't buy pre-made, packaged dinners, and am conscious of the 4 food groups and the recommended intake of each. This doesn't seem to help me in my almost daily struggle.

For dinner tonight, we had leftover pizza which I made yesterday. Ro loved it, but it certainly wasn't picture worthy. What will we have tomorrow? Ro will have a dinner-type lunch at preschool (one of the many things I love about The Chartwell House), so then we will have lunch for dinner - veggies, nuts, cheese, bread, yogurt, fruit. But on Friday? Don't ask me. How do others mom decide what to prepare? Anyone?

I've always struggled with what to make so now decide on Sunday for the week depending on what he have around and what's on sale... nice not having to decide last minute. I've also started making bigger batches of chilli, soup, casseroles etc. and leaving a stash in the freezer.
