our favourite breakfast

Breakfast time. Some people hate it. Some people love it. I have always been a lover of all things breakfast. I delight in eating breakfast at restaurants and enjoying the breads, the egg dishes, the fruit, the smoothies... I am married to someone who is not as passionate about breakfast, but he does eat it every morning. Eggs make him vomit (unless they are a small ingredient in something). Sorry for the honesty but it is true. 

Rowyn loves breakfast too. She wakes up hungry and wants to eat...immediately. That's how she rolls. I get it. I'm hungry too when I wake up. But I have also reached the point in my life where I savour every last minute in bed. Maybe it is being the mother of two. Who knows. Ro's favourite breakfast items have changed over time. She used to be a hardcore oatmeal fan. Then she switched to homemade oatmeal pancakes. These still hold her heart, though she savours oatmeal every once in a while (now that her sister eats it for breakfast), but as a strong second, she loves her Daddy's favourite breakfast. And our favourite breakfast is...

Homemade granola. It is to die for. It is yummy, filling, different every bite. We add dried cherries to ours, and it makes it absolutely perfect. I make granola on a regular basis so we don't run out. 


Here it is, after it has been baked. Soooo good.


Here is the recipe, if you are interested in trying it. Trust me. You won't be disappointed.

4 cups oats (I use organic - there is a difference!!)
The following quantities can be tweaked to your liking:
3/4 cup sunflower seeds
1/2 cup sliced almonds
2/3 cup unsweetened coconut (harder to find than you would think - everyone carries the sweetened version though)
1/4 to 1/2 cup chopped pecans (depending on what you like)
cinammon to taste (I use about 1 teaspoon).
Mix these items together.

Boil together:
1/2 cup honey
1/3 cup maple syrup
1/3 cup water
3 Tablespoons oil

Pour the liquid mixture over the dried ingredients and mix well. I convection bake mine in a 9x13 Pampered Chef pan (I.love.Pampered.Chef) at 325. If you don't have a convection oven, bake at 350. I stir it every 10 minutes until it is toasted to my liking (about 1 hour).

I make mine whenever I have a spare hour or know I will be home for an hour (during naptime or after the girls are in bed). I boil the wet ingredients while I mix the dry ingredients. I love being able to fill my beloveds' bellies with homemade goodness. I figure it is a great way to start the day!!
